🛒 Ingredients

30 servings

30
  • 1 can sweetened condensed milk (14 oz / 397 g)
  • 3 tablespoons unsweetened cocoa powder
  • ¾ cup heavy whipping cream (200 ml)
  • 1 small pinch of fine sea salt

Directions

  1. 1

In a small heavy-bottomed saucepan, combine the condensed milk and sifted cocoa powder. Whisk together off the heat until fully blended and lump-free.

  2. 2

Place over low heat and cook, stirring constantly with a spatula, for 6–8 minutes until the mixture just begins to bubble. Do not let it reach a rolling boil.

  3. 3

Remove from heat immediately. Pour in the heavy cream and add the sea salt, then stir vigorously until the sauce is smooth, glossy and coats the back of a spoon.

  4. 4

Transfer to a heatproof bowl, press cling film directly onto the surface, and refrigerate for at least 2 hours before serving.

💡 Chef's Tip

For extra depth, stir in ½ teaspoon of vanilla extract along with the cream. The sauce keeps refrigerated for up to 5 days and can be gently rewarmed over a bain-marie.
