  • 24 large raw shrimp
  • 2 tbsp olive oil
  • 1 small onion
  • 1 bay leaf
  • 1 pinch saffron
  • 2 1/4 cups paella rice
  • 2 tsp tomato paste
  • 3/4 cup dry white wine
  • 2 3/4 cups seafood stock
  • 3 medium calamari
  • Salt and pepper to taste

Directions

    Peel and devein most of the shrimp, keeping a few whole for decoration. Heat the olive oil in a large paella pan over medium-low heat and sauté the onion for 5 minutes until tender. Add the bay leaf, saffron, rice, and tomato paste; cook for 1-2 minutes while stirring.

    Pour in the white wine and let it boil for 1-2 minutes. Add the seafood stock and 2/3 cup of water. Cook for 5 minutes, then stir in the calamari, season, and mix. Bring to a boil, cover, and reduce to very low heat. Let cook for 12 minutes, adding water if necessary.

    Uncover and stir in the peeled shrimp. Arrange the whole shrimp on top of the rice. Cover again and let simmer for 5-6 minutes until the shrimp are pink. Let rest for 2 minutes before serving directly in the pan.

💡 Chef's Tip

Use a high-quality seafood stock for an authentic flavor. Saffron is essential for the traditional color and taste. Do not cover for too long to prevent the rice from becoming mushy. Prepare the ingredients the day before to save time.
