  • 2 tbsp seasoned rice vinegar
  • 6 oz vermicelli rice noodles
  • 2 eggs
  • 2 tbsp ground ginger
  • 1 clove garlic, finely minced
  • 2 carrots, julienned
  • 1 jalapeño, sliced
  • 1/2 sweet onion, sliced
  • 1/2 tsp salt
  • 4 oz ham, cut into strips
  • 1/2 Napa cabbage, shredded
  • 4 green onions, chopped
  • 1/2 red bell pepper, sliced
  • 2 tsp curry powder
  • 8 oz peeled shrimp
  • 2 tbsp fresh cilantro leaves

    Prepare the sauce: mix the sesame oil, soy sauce, and rice vinegar in a bowl.

    Cook the rice noodles: bring a large pot of water to a boil, add the noodles, and stir with tongs until fully submerged. Cook for 2 minutes until tender but still slightly firm.
