🛒 Ingredients

16 servings

16
  • 600 g chicken pieces (thighs and drumsticks)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 3 ripe tomatoes, peeled and deseeded
  • 1 can crushed tomatoes (400 g)
  • 200 g short-grain rice
  • 200 g cauliflower or broccoli florets
  • Juice of 1 lemon
  • 2 tablespoons sour cream or crème fraîche
  • Fresh chives and parsley, chopped
  • Olive oil
  • Salt and pepper

Directions

  1. 1

Heat a drizzle of olive oil in a large pot over medium heat. Sauté the onion and garlic until soft and lightly golden.

  2. 2

Add the peeled tomatoes and crushed tomatoes, stir and cook for 2 minutes.

  3. 3

Add the chicken pieces and brown on all sides for about 5 minutes.

  4. 4

Pour in approximately 1.5 litres of water to cover generously. Season with salt and pepper, bring to a boil, then reduce heat, cover and simmer for 20 minutes.

  5. 5

Add the rice and vegetables and continue simmering for 15–20 minutes until the rice is cooked through and the chicken is tender.

  6. 6

Off the heat, stir in the lemon juice and sour cream. Adjust seasoning, sprinkle with fresh chives and parsley, and serve piping hot.

💡 Chef's Tip

For extra depth of flavour, marinate the chicken in lemon juice with a pinch of salt for 30 minutes before cooking. Swap cauliflower for leeks or spinach for a lighter, more delicate finish.
