8 servings

8
  • 1 chicken breast, cut into thin strips
  • 2 small onions, grated (keep the juice)
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp ground nutmeg
  • 1 tsp sweet paprika
  • 1 tbsp all-purpose seasoning (no chili)
  • 2 tbsp vegetable oil
  • 2 tbsp unsalted margarine
  • 3 tbsp ketchup
  • 1 tbsp mustard
  • 1 bunch fresh parsley, chopped
  • 2½ cups (600 ml) water
  • 150 g whole mushrooms
  • Salt to taste

Directions

  1. 1

Season the chicken strips with oregano, nutmeg, paprika, and all-purpose seasoning. Let rest for 10 minutes.

  2. 2

In a large pan, sauté the garlic and grated onion (including the grating liquid) in oil over medium heat for about 3 minutes until softened.

  3. 3

Add one tablespoon of margarine and cook for another 2 minutes, stirring constantly.

  4. 4

Add the fresh parsley and sauté for 1 minute to release its fragrance.

  5. 5

Add the seasoned chicken strips and stir well to coat them with the aromatics.

  6. 6

Add the remaining margarine and cook until the chicken is golden brown, about 5 minutes over medium-high heat.

  7. 7

Stir in the ketchup and mustard, mixing well to coat every piece of chicken.

  8. 8

When the mixture starts to stick to the bottom, pour in the water and add the mushrooms.

  9. 9

Bring to a boil, then reduce heat and simmer for 5 minutes until the sauce thickens.

  10. 10

Season with salt to taste and serve immediately.

💡 Chef's Tip

Serve over steamed white rice or egg noodles. For a creamier sauce, stir in 2 tbsp of sour cream or heavy cream just before serving.
