Directions
- 1
Make sure your blender or food processor is completely dry — any moisture will cause the sugar to clump. Wipe the bowl and blades thoroughly with a clean, dry cloth.
- 2
Add the granulated sugar, cornstarch, salt, and vanilla powder (if using) to the blender.
- 3
Blend on high speed for 1 to 2 minutes until you get a very fine, smooth powder. Pause halfway through to scrape down the sides if needed.
- 4
Sift the powdered sugar through a fine-mesh sieve into a clean bowl to remove any remaining lumps or unground granules.
- 5
Transfer to an airtight glass jar and store away from moisture. Your homemade powdered sugar will keep for several months.
💡 Chef's Tip
Never add any liquid — this is a dry-grinding process. For an extra-fine result, sift twice. Cornstarch is essential: it prevents caking and gives powdered sugar its characteristic silky, impalpable texture.
