🛒 Ingredients

12 servings

12
  • 1 package granulated tapioca (about 500 g / 17 oz)
  • 1 cup granulated sugar
  • 1 liter (4 cups) boiling whole milk
  • 1 can (14 oz / 395 g) sweetened condensed milk
  • Freshly grated coconut, to taste

Directions

  1. 1

In a rectangular baking dish, combine the granulated tapioca and sugar, stirring until evenly mixed.

  2. 2

Pour the boiling milk over the mixture and stir vigorously to ensure all the tapioca grains are fully moistened.

  3. 3

Let the mixture rest undisturbed for 10 minutes, allowing the tapioca to swell and absorb all the liquid.

  4. 4

Drizzle the sweetened condensed milk evenly over the entire surface, covering all the way to the edges.

  5. 5

Sprinkle freshly grated coconut generously over the top.

  6. 6

Cut into squares and serve at room temperature or chilled.

💡 Chef's Tip

Add a squeeze of fresh lime juice or some lime zest over the condensed milk for a bright, tangy contrast to the sweetness. Toasted desiccated coconut works well as a substitute if fresh coconut isn't available.
