Directions
- 1
Preheat the oven to 180 °C (350 °F). Grease a large baking dish generously with butter.
- 2
Add the oil, eggs, milk, flour, crumbled stock cube and baking powder to the blender. Blend until you have a smooth, lump-free batter.
- 3
Boil the chicken breast in salted water for 20 minutes. Let it cool slightly, then shred it finely with two forks.
- 4
Sauté the shredded chicken with the corn and peas in a pan over medium heat for 5 minutes until lightly golden. Season with salt, pepper and fresh parsley.
- 5
Pour half the batter into the prepared dish. Spread the chicken filling evenly on top, then pour the remaining batter over it.
- 6
Sprinkle grated cheese generously over the surface and bake for 35–40 minutes, until deep golden and a skewer comes out clean. Rest for 5 minutes before slicing.
💡 Chef's Tip
Swap mozzarella for parmesan for a sharper flavour. Leftovers keep well in the fridge for up to 2 days and reheat beautifully in the oven at 160 °C.
