🛒 Ingredients

20 servings

20
  • 200 g (7 oz) fresh ricotta cheese, well drained
  • 3 tablespoons light mayonnaise
  • 2 tablespoons fresh chives, finely chopped
  • 2 tablespoons fresh flat-leaf parsley, finely chopped
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon fresh lemon juice (optional)

Directions

  1. 1

Drain the ricotta thoroughly if needed, then mash it with a fork in a bowl until completely smooth and lump-free.

  2. 2

Add the light mayonnaise and stir gently until fully incorporated into a creamy, uniform base.

  3. 3

Fold in the fresh chives and parsley, then season with salt, pepper, and a squeeze of lemon juice if using.

  4. 4

Taste and adjust seasoning. Refrigerate for at least 15 minutes before serving to let all the flavors meld beautifully.

💡 Chef's Tip

Serve on toasted baguette slices, crackers, or crunchy vegetable sticks. Keeps well in an airtight container in the fridge for up to 3 days.
