Directions
- 1
Place the ribs in a large pot and cover with cold water. Bring to a boil, cover, and cook for 15 minutes. Drain well.
- 2
Season the ribs lightly with salt and black pepper — a few pinches on each side is enough.
- 3
Arrange the ribs in a baking dish and roast in a preheated oven at 180 °C (350 °F) for 40 to 50 minutes, until golden and slightly crispy on the outside.
- 4
Meanwhile, make the sauce: sauté the onion in oil over medium heat until soft and translucent. Add the brown sugar and vinegar, stirring until the sugar fully dissolves.
- 5
Stir in the Worcestershire sauce, ketchup, chili powder, and water. Simmer over low heat, stirring occasionally, until the sauce thickens to a glossy consistency.
- 6
Taste the sauce and adjust the chili powder to your preferred heat level.
- 7
Remove the ribs from the oven, brush generously with sauce, and bake for 10 more minutes. Flip the ribs, brush the other side, and bake for another 10 minutes.
- 8
Pour any remaining sauce over the ribs and bake for a final 10 minutes for a beautifully caramelized finish.
💡 Chef's Tip
For extra tender and deeply flavored ribs, marinate them in half the sauce overnight in the refrigerator. The next day the meat absorbs all the seasonings and caramelizes even more spectacularly in the oven.
