8 servings

8
  • 2 kg beef tripe
  • 6 lemons
  • 500 g dried white beans
  • 2 tomatoes, peeled and chopped
  • 2 onions
  • 500 g Tuscan sausage, diced
  • 1 whole head of garlic, unpeeled
  • 2 bay leaves
  • Natural food coloring (annatto) to taste
  • 1 tablespoon hot paprika
  • Salt to taste
  • Olive oil to taste
  • Fresh coriander, chopped, to taste

Directions

  1. 1

The night before, soak the white beans in plenty of cold water.

  2. 2

Drain the beans and cook them in fresh water with the whole unpeeled garlic head, bay leaves, and salt until tender but still intact, about 20 minutes. Set aside.

  3. 3

Trim all excess fat from the tripe and cut into strips. Rinse thoroughly under cold water several times.

  4. 4

Place the tripe in a bowl and squeeze the lemons (with their peel) directly over it. Let stand for 10 minutes to degorge, then rinse.

  5. 5

Blanch the tripe at least 3 times in boiling water, changing the water each time. Drain well.

  6. 6

In a pressure cooker, combine the tripe with water, 1 whole peeled onion, bay leaves, and salt. Seal and cook under pressure for 15 minutes or until the tripe is tender. Drain and set aside.

  7. 7

In a large pan, heat a drizzle of olive oil and brown the sausage until golden. Add the diced onion, food coloring, paprika, chopped coriander, and tomatoes. Simmer over medium heat for 5 minutes.

  8. 8

Add the drained tripe and white beans to the pan. Stir gently and simmer for 10 more minutes until everything is well combined and flavors have melded. Adjust seasoning and serve hot.

💡 Chef's Tip

Like most stews, this dish tastes even better the next day. Serve alongside white rice and cassava flour for a truly authentic Brazilian meal.
