🛒 Ingredients

50 servings

50
  • 500 g dark chocolate (70% cocoa), finely chopped
  • 200 g milk chocolate, finely chopped
  • 200 ml heavy cream
  • 1 tablespoon unsalted butter
  • 1 tablespoon liquid honey
  • Unsweetened cocoa powder, for coating
  • Optional fillings: candied cherries, chopped walnuts, shredded coconut, a drop of liqueur

Directions

  1. 1

Place the finely chopped dark and milk chocolate in a heatproof bowl.

  2. 2

Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer — do not boil.

  3. 3

Pour the hot cream over the chocolate and let it sit for 2 minutes. Stir gently until the ganache is smooth and glossy.

  4. 4

Add the butter and honey, and mix until fully incorporated and silky.

  5. 5

Cover the bowl with plastic wrap and refrigerate for at least 2 hours, until the ganache is firm enough to shape.

  6. 6

Using a small spoon or melon baller, scoop portions of ganache and roll them between your palms into balls. Optionally, press a cherry, walnut, or a drop of liqueur into the center before shaping.

  7. 7

Roll each truffle in unsweetened cocoa powder until fully coated.

  8. 8

Place in paper candy cups and store in the refrigerator until ready to serve.

💡 Chef's Tip

For a crunchier shell, dip the truffles in tempered melted chocolate instead of cocoa powder. A pinch of fleur de sel or a hint of orange zest in the ganache adds a sophisticated twist.
