🛒 Ingredients

15 servings

15
  • 1 can (14 oz) sweetened condensed milk
  • 2 cans (same measure) whole milk
  • 2 tbsp cornstarch
  • 1 packet (10 g) vanilla sugar
  • 1 tbsp unsalted butter
  • 2 egg yolks
  • 2 bunches red grapes (or strawberries as substitute)
  • 7 oz (200 g) dark baking chocolate
  • 7 oz (200 g) milk chocolate
  • 7 oz (200 g) heavy cream

Directions

  1. 1

Blend the condensed milk, whole milk, cornstarch, vanilla sugar, butter and egg yolks together until completely smooth.

  2. 2

Pour the mixture into a saucepan and cook over medium heat, stirring constantly, until thickened to a soft custard-like consistency.

  3. 3

Pour the vanilla cream into a baking dish or individual serving glasses and allow to cool completely at room temperature.

  4. 4

Arrange the grapes — whole or halved — in an even layer over the cooled vanilla custard.

  5. 5

Melt both chocolates together in a double boiler or microwave in 30-second intervals, stirring between each burst.

  6. 6

Stir the heavy cream into the melted chocolate until you get a smooth, glossy ganache.

  7. 7

Pour the ganache evenly over the grape layer, covering the fruits completely.

  8. 8

Cover and refrigerate for at least 3 hours. Serve well chilled.

💡 Chef's Tip

Use individual glasses or ramekins for an elegant presentation. Garnish with a few fresh grapes and chocolate shavings just before serving. Good-quality chocolate makes the ganache firmer and glossier.
