15-Minute Chicken and Halloumi Burgers

- 2 chicken breasts
- 1 tbsp neutral oil
- 4 tbsp hot sauce
- 0.5 fresh lemon, juiced
- 2 burger buns
- 9 oz halloumi
- 0.25 head white cabbage
- 2 tbsp mayonnaise
- 4 tbsp sour cream
- 4 lettuce leaves
- 2 red bell peppers, sliced
- 1 tsp black pepper

Place the chicken breasts between two sheets of parchment paper. Using a rolling pin, gently flatten them to 0.4 inches thick. Cut each breast in half.

STOVETOP: Heat two skillets over medium-high heat, add oil to one. Fry the chicken for 3-4 minutes on each side. Season, reduce heat, add the hot sauce and half of the lemon juice. Cook for 1-2 minutes. AIR-FRYER: Preheat to 355°F (4 min), cook the chicken for 12 minutes, add the hot sauce and lemon juice, cook for 1-2 additional minutes.

Toast the buns in a dry skillet for 30 seconds, or in the air-fryer at 390°F for 1-2 minutes.

If using an air-fryer: increase the temperature to 390°F, add the halloumi and cook for 10 minutes, turning halfway through until golden.

Mix the finely shredded cabbage with the mayonnaise and the remaining lemon juice. Set aside.

Assemble the burgers: spread the buns with sour cream, add the lettuce, spicy chicken, golden halloumi, and red bell pepper slices. Top with the cabbage mixture and black pepper. Serve hot with a side of green salad.
