🛒 Ingredients

4 servings

4
  • 1 tbsp unsalted butter
  • 2 yellow onions, sliced into rings
  • 500 g (1 lb) chicken wings
  • 4 tbsp Dijon mustard
  • 200 ml heavy cream
  • 4 tbsp grated parmesan
  • 1 egg yolk
  • Fresh thyme sprigs
  • Salt, to taste
  • Black pepper, to taste

Directions

  1. 1

Preheat oven to 180 °C (350 °F). Mix Dijon mustard with salt, pepper and thyme leaves in a small bowl. Set aside.

  2. 2

Butter a baking dish and spread the onion rings evenly across the bottom.

  3. 3

Arrange the chicken wings on top of the onions, skin side up, and coat generously with the mustard marinade. Cover tightly with aluminium foil and bake for 30 minutes.

  4. 4

Meanwhile, whisk together the heavy cream, egg yolk and grated parmesan until smooth.

  5. 5

Remove the foil, pour the cream sauce over the wings and return to the oven for 15 more minutes, until the top is golden and bubbling.

  6. 6

Rest for 5 minutes before serving with steamed white rice and sautéed peas.

💡 Chef's Tip

For an extra-golden crust, switch the oven to broil/grill for the final 2–3 minutes. Gruyère works as a great substitute for parmesan.
