Directions

  1. 1

Wash the cucumbers carefully without peeling to preserve the green color. Cut off the ends of each cucumber.

  2. 2

Using a spiralizer, transform the cucumbers into long, regular strips (medium blade). In the absence of a spiralizer, use a mandoline to create wide tagliatelles.

  3. 3

Place the cucumber spirals in a colander, sprinkle with fine salt, and let them drain for 10 minutes. This step is essential to remove excess water and prevent a soggy salad.

  4. 4

Meanwhile, prepare the dressing: whisk together the olive oil, lemon juice, zest, and pepper. Reserve.

  5. 5

Gently press the cucumber spirals between your hands or in a clean towel to dry them without breaking.

  6. 6

Wash and dry the figs, then cut them into quarters. Gently crumble the slices of Parmesan ham to give them volume.

  7. 7

On each plate, arrange the cucumber spirals in a delicate dome shape by gently wrapping them around themselves.

  8. 8

Arrange the shrimp, crumbled ham, and fresh fig quarters harmoniously around and on top of the cucumber dome.

  9. 9

Generously drizzle with lemon-olive oil dressing. Sprinkle with pistachio bits and fresh mint leaves. Add a pinch of Espelette pepper if desired. Serve immediately.

💡 Chef's Tip

The secret to a successful airy salad is never to drown the cucumber spirals. Season just before serving and serve immediately. For an extra touch of indulgence, sauté the shrimp for 1 minute in a pan with a drizzle of oil and a pinch of garlic, then let them cool before arranging — the warm-cold contrast with the fresh cucumber is absolutely sublime.
