Airy Cucumber-Spiral, Shrimp, Parmesan Ham & Fresh Figs Salad
A reinvented summer salad that combines the softness of spiralized cucumbers with the sweetness of fresh figs, the generosity of Parmesan ham, and the crunch of pistachios.

- 2 large cucumbers (approximately 600g)
- 150g cooked and peeled shrimp
- 6 thin slices of Parmesan ham
- 4 fresh, ripe figs
- 40g unsalted pistachio bits
- A small handful of fresh mint leaves
- 3 tablespoons of extra virgin olive oil
- The juice of 1 organic lemon (approximately 3 tablespoons)
- The zest of 1/2 lemon
- 1/2 teaspoon of fine salt
- Black pepper from the mill
- A pinch of Espelette pepper (optional)

Wash the cucumbers carefully without peeling to preserve the green color. Cut off the ends of each cucumber.

Using a spiralizer, transform the cucumbers into long, regular strips (medium blade). In the absence of a spiralizer, use a mandoline to create wide tagliatelles.

Place the cucumber spirals in a colander, sprinkle with fine salt, and let them drain for 10 minutes. This step is essential to remove excess water and prevent a soggy salad.

Meanwhile, prepare the dressing: whisk together the olive oil, lemon juice, zest, and pepper. Reserve.

Gently press the cucumber spirals between your hands or in a clean towel to dry them without breaking.

Wash and dry the figs, then cut them into quarters. Gently crumble the slices of Parmesan ham to give them volume.
