  • 1 tablespoon olive oil
  • 1 tablespoon minced red onion
  • 1 clove garlic, crushed
  • Salt to taste
  • Pepper to taste
  • 1 plum tomato, diced

    Preheat the oven to 450°F. Place the whole peppers on aluminum foil. Bake until the skin is charred and the peppers are tender, 30 to 45 minutes, turning as needed.

    Remove from the oven and let cool for 10 minutes. Peel the peppers, remove the stems and seeds. Cut into approximately 1/2-inch pieces.

    Heat the olive oil in a skillet over medium heat. Add the onion and cook for 5 minutes, stirring until translucent. Add the garlic, salt, and pepper. Stir in the peppers and tomato. Cook for 5 minutes over medium heat until the tomato is tender.

For an authentic flafla, the peppers must be well-roasted for a sweet and smoky flavor. Serve warm or at room temperature. It keeps for 2-3 days in the refrigerator.
