Easy Brazilian Ambrosia

By Marie Lefebvre · Updated October 16, 2026

This Brazilian ambrosia is the kind of comforting dessert that simmers away on the stove with just milk, eggs and caramelised sugar. Fragrant with cinnamon and clove, it turns silky and tender as it sets. A simple pantry recipe that's lovely served well chilled.

🛒 Ingredients

6 servings

6
  • 1 litre whole milk
  • 2 cups granulated sugar
  • 6 whole eggs
  • 1 cinnamon stick
  • 4 cloves
  • Juice of 1 small lemon

Directions

  1. 1

In a medium saucepan, add half of the sugar along with the cinnamon stick and cloves.

  2. 2

Heat over medium until the sugar melts and turns a golden caramel colour.

  3. 3

Off the heat, pour in the milk, lemon juice and remaining sugar, then stir in the eggs, beaten beforehand so the yolks are well combined.

  4. 4

Return to a low heat and stir gently from time to time with a wooden spoon.

  5. 5

Let it simmer down until the mixture thickens and is almost dry, then remove the spices and leave to cool.

💡 Chef's Tip

Stir softly rather than vigorously so the curds stay small and the texture stays creamy. Fish out the cinnamon and cloves before serving and enjoy it chilled.
