🛒 Ingredients

5 servings

5
  • 2 kg (4.4 lb) yellow onions
  • 6 heads of garlic
  • 1 cup (250 ml) vegetable or olive oil
  • 1 tablespoon fine sea salt
  • ½ bunch fresh flat-leaf parsley

Directions

  1. 1

Peel the onions and separate all garlic cloves, removing their skins.

  2. 2

Wash and dry the parsley, removing the thickest stems.

  3. 3

Place all ingredients in a blender and process until you get a smooth, uniform paste.

  4. 4

Transfer the seasoning into clean glass jars with tight-fitting lids.

  5. 5

Refrigerate and use as needed — it keeps well for several weeks.

💡 Chef's Tip

Use 1–2 tablespoons per dish as a base seasoning instead of fresh garlic and onion. Freeze portions in ice cube trays for longer storage and quick single-use portions.
