🛒 Ingredients

6 servings

6
  • 1 kg (2.2 lb) chuck roast
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 2 tbsp white wine vinegar
  • 5 tbsp soy sauce
  • Ground cumin, to taste
  • White pepper, to taste
  • Ground nutmeg, to taste
  • Salt, to taste
  • 1 tbsp neutral oil

Directions

  1. 1

In a bowl, combine onion, garlic, bay leaves, vinegar, soy sauce, and spices. Add the beef, coat well, and marinate for 30 minutes.

  2. 2

Heat oil in the pressure cooker over high heat. Sear the beef for 2 minutes per side until browned, then pour in the marinade.

  3. 3

Seal the pressure cooker lid. Once it reaches full pressure, lower the heat and cook for 1 hour.

  4. 4

Release pressure safely, slice the beef, spoon the pan juices over the top, and serve immediately.

💡 Chef's Tip

For a thicker sauce, remove the cooked beef and simmer the cooking juices uncovered for 5 minutes on high heat before plating.
