🛒 Ingredients

8 servings

8
  • 3 tablespoons olive oil
  • 2 garlic cloves, finely chopped
  • 2 medium onions, diced
  • 1 kg (2.2 lbs) chuck or braising beef, cut into cubes
  • 1 bay leaf
  • salt to taste
  • ½ cup tomato purée
  • 4 cups water
  • 2 beef bouillon cubes
  • ½ cup dry red wine
  • 500 g (1.1 lbs) pearl onions
  • 1 green bell pepper, diced
  • black pepper to taste

Directions

  1. 1

Heat the olive oil in a large pot over medium heat. Sauté the diced onions and garlic until softened and lightly golden.

  2. 2

Add the beef cubes, bay leaf and pepper. Brown the meat on all sides, stirring occasionally.

  3. 3

Pour in the water and dissolve the bouillon cubes. Stir in the tomato purée, red wine and diced bell pepper. Mix well, cover and simmer over low heat for 30 minutes.

  4. 4

Add the pearl onions whole. Cook for another 10 minutes until tender. Adjust seasoning and serve hot.

💡 Chef's Tip

For a richer sauce, dust the beef with a tablespoon of flour before adding the liquid. Serve over mashed potatoes, egg noodles or crusty bread to soak up the delicious gravy.
