🛒 Ingredients

4 servings

4
  • 1 kg (2.2 lb) beef chuck or brisket
  • 1/2 red bell pepper, sliced into strips
  • 2 medium onions, sliced into rings
  • 2 tablespoons coarse salt
  • Fresh parsley to taste
  • 2 tablespoons olive oil
  • 2 bay leaves
  • Hot water as needed

Directions

  1. 1

Season the beef generously with coarse salt at least 2 hours ahead — or overnight for best results. Keep refrigerated until ready to cook.

  2. 2

Heat olive oil in the pressure cooker over medium-high heat. Sear the beef on all sides until deep golden brown.

  3. 3

Add the onion rings and cook for 3–4 minutes, stirring until softened and slightly caramelized.

  4. 4

Add the bell pepper strips and bay leaves. Stir to combine and coat everything in the pan drippings.

  5. 5

Pour in enough hot water to reach halfway up the meat — do not fully submerge.

  6. 6

Seal the pressure cooker and cook on medium heat for 1 hour once full pressure is reached.

  7. 7

Release pressure, check tenderness, adjust seasoning and finish with freshly chopped parsley before serving.

💡 Chef's Tip

Add a splash of red wine to the cooking liquid for extra depth. Leftovers taste even better the next day — reheat gently with a spoonful of the cooking juices.
