Directions
- 1
If using salted beef, soak it in a large bowl of cold water for 20 minutes, then change the water two or three times to draw out the excess salt.
- 2
Drain the meat and pat it thoroughly dry with paper towels to ensure a good sear.
- 3
Melt 20 g of butter in a skillet over medium-high heat. Add the beef slices one at a time, pressing them lightly against the pan to prevent excess moisture from releasing.
- 4
Brown each slice for 3 to 4 minutes per side until nicely golden. Set aside and keep warm.
- 5
In the same skillet, add the remaining butter and cook the sliced onion rings over low heat for 8 to 10 minutes until soft and lightly caramelised.
- 6
Return the beef slices to the pan with the onions, season with pepper to taste and serve immediately.
💡 Chef's Tip
For even more flavour, let the meat rest at room temperature for 5 minutes before cooking. Onions can be swapped for shallots for a milder, more delicate finish.
