🛒 Ingredients

8 servings

8
  • 1 kg dried salted beef
  • 3 large yellow onions, cut into thick rings
  • 50 g (3½ tbsp) unsalted butter
  • 5 large garlic cloves, crushed
  • Water for boiling and desalting

Directions

  1. 1

Place the dried beef in a large pot, cover completely with cold water and bring to a boil. Cook for 15 minutes to remove excess salt.

  2. 2

Drain all the water. For less saltiness, repeat the boiling process with fresh water — but avoid over-cooking to keep the meat's distinct flavor. Return the pot to high heat and let any remaining moisture evaporate completely.

  3. 3

Add the butter to the hot meat and stir well to coat every piece. Add the crushed garlic and cook until golden and fragrant.

  4. 4

Add the onion rings and sauté over medium-high heat, stirring occasionally.

  5. 5

As soon as the onions soften and turn lightly golden, remove from heat and serve immediately.

  6. 6

No salt needed — the dried beef provides all the seasoning.

  7. 7

    Enjoy!

💡 Chef's Tip

Serve alongside white rice, black beans, or steamed cassava for a complete meal. For softer onions, cover the pan for the last 2 minutes of cooking.
