  • 400 g (14 oz) salt cod
  • 2 medium potatoes
  • 2 egg yolks
  • 2 egg whites, beaten to stiff peaks
  • 3 tablespoons grated cheese
  • 4 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • Fresh parsley, chopped, to taste
  • Black pepper to taste
  • Salt if needed
  • Vegetable oil for frying

    Soak the salt cod in cold water for at least 12 hours, changing the water 3–4 times to remove excess salt.

    Cook the cod and potatoes together in a pot of boiling water for about 20 minutes, then drain well.

    Flake the cod, removing any bones and skin, and mash the potatoes until smooth.

    In a large bowl, combine the flaked cod, mashed potato, egg yolks, grated cheese, flour, baking powder, and parsley. Season with pepper.

    Gently fold in the stiff egg whites to create a light, airy batter — do not overmix.

    Shape the fritters using two tablespoons to form small oval quenelles.

    Heat the oil to 180 °C (350 °F) and fry in small batches for 3–4 minutes until deep golden. Drain on paper towels and serve immediately.
