Beijinhos de Coco (Brazilian Coconut Bites)
A beloved Brazilian party sweet that is soft, fragrant and almost too easy to make. These little coconut and condensed milk bites get rolled in sugar and disappear fast. Perfect for sharing, gifting, or serving with coffee.

Directions
- 1
Combine the condensed milk, shredded coconut and margarine in a heavy-bottomed saucepan.
- 2
Cook over medium heat, stirring constantly with a spatula, until the mixture thickens and pulls away from the bottom of the pan, about 10 to 15 minutes.
- 3
Spread the mixture onto a lightly greased plate and let it cool completely, then chill for at least one hour.
- 4
With lightly greased hands, scoop small spoonfuls of the mixture and roll them into walnut-sized balls.
- 5
Roll each ball in granulated sugar (or extra shredded coconut) and press a whole clove on top.
- 6
Place the beijinhos in paper cases and keep them chilled until serving.
💡 Chef's Tip
Grease your hands lightly before rolling: the mixture stops sticking and the balls stay perfectly round. If the dough feels too soft, return it to the heat for a few minutes; if it is too firm, stir in a spoonful of condensed milk. Swap the sugar for extra shredded coconut for a softer coating. They keep for up to 5 days in an airtight container in the fridge.
