🛒 Ingredients

15 servings

15
  • 2 chicken breasts, cut into large chunks
  • 1 packet dry onion soup mix
  • 1 can (285 g) sweet corn, drained
  • 1 cup (200 ml) heavy cream
  • ⅔ cup (150 g) cream cheese

Directions

  1. 1

Preheat oven to 400 °F (200 °C). Arrange the chicken chunks in a lightly greased baking dish.

  2. 2

Sprinkle the dry onion soup mix over the chicken and toss to coat every piece evenly.

  3. 3

In a blender, combine the drained corn, heavy cream and cream cheese. Blend until completely smooth.

  4. 4

Pour the corn cream mixture over the chicken, making sure every piece is fully covered.

  5. 5

Bake for 35–40 minutes, until the top is golden brown and the chicken is cooked through.

  6. 6

Serve hot with steamed rice, sautéed potatoes or a simple green salad.

💡 Chef's Tip

For an extra-golden crust, switch to the broiler for the last 3 minutes. Sour cream can replace the cream cheese for a slightly tangier flavour.
