Directions
- 1
In a large bowl, combine the ground beef with flour, crushed garlic, grated onion, salt, parsley and chives. Knead well with your hands until the mixture is uniform and holds together. Add chopped mint if desired.
- 2
Shape the mixture into walnut-sized balls and set aside on a plate.
- 3
Heat a drizzle of olive oil in a large skillet over medium heat. Sauté additional garlic and onion until softened but not browned.
- 4
Add the meatballs and cook gently, turning carefully to avoid breaking them, until golden brown on all sides.
- 5
Once well browned, crumble in the bouillon cube and add water gradually as it evaporates, keeping the sauce from drying out.
- 6
When the meatballs are cooked through, add a splash more water, the bell pepper strips, tomato slices and tomato sauce if using. Cover the pan.
- 7
Turn off the heat and let rest covered for a few minutes. Transfer to a serving dish and enjoy with your favourite sides.
💡 Chef's Tip
For extra-tender meatballs, mix in a slice of white bread soaked in milk and squeezed dry. These reheat beautifully — make them ahead and warm gently in the sauce for an even richer flavour.
