Oven-Baked Brigadeiro

A Brazilian chocolate flan with an incredibly silky centre — as easy as a pudding and twice as indulgent. The oven-baked brigadeiro comes together in a blender in ten minutes, then the oven does the rest. Finished with chocolate sprinkles, it never lasts long.

  • 1 can sweetened condensed milk (397 g)
  • 200 ml (¾ cup) heavy cream
  • 1 tbsp unsalted butter, melted
  • 3 eggs
  • 6 tbsp unsweetened cocoa powder
  • Chocolate sprinkles, to decorate
  • A little butter, for greasing
  • Aluminium foil
  • 1 flan or pudding mould, about 20 cm (8 in)

Directions

  1. 1

Preheat the oven to 180 °C (350 °F). Blend the condensed milk, cream, melted butter, eggs and cocoa for 10 minutes, until completely smooth.

  2. 2

Grease the mould generously and pour in the mixture.

  3. 3

Cover tightly with foil and bake for 1 hour — the flan should be set but still wobble slightly in the middle.

  4. 4

Take the mould out of the oven and let it cool for 15–20 minutes.

  5. 5

Unmould gently and scatter over the chocolate sprinkles while the flan is still warm, so they stick.

💡 Chef's Tip

Brazilian 'medium oven' is roughly 180 °C / 350 °F. Don't bake it longer than an hour or the flan turns airy with bubbles. It looks soft coming out of the oven — that's normal, it firms up completely as it cools. Unmould it while still warm: it releases more cleanly and cracks less.
