🛒 Ingredients

20 servings

20
  • 1 can sweetened condensed milk (397 g)
  • 1 cup heavy cream (or 1 can table cream, 200 g)
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon unsalted butter
  • Chocolate sprinkles, for decorating

Directions

  1. 1

In a heavy-bottomed saucepan, combine the condensed milk, butter and cocoa powder. Whisk off the heat until smooth and lump-free.

  2. 2

Set the pan over low heat and stir constantly with a spatula, scraping the bottom and sides, for 8 to 10 minutes.

  3. 3

The mixture is ready when it thickens, pulls away from the bottom and falls from the spatula in a soft ribbon — the classic soft brigadeiro stage.

  4. 4

Remove from the heat and stir in the cream until fully combined, then divide between small glasses or ramekins.

  5. 5

Let cool slightly, top with chocolate sprinkles and serve with small spoons.

💡 Chef's Tip

To check the soft brigadeiro stage, drag your spatula across the bottom of the pan: if the line closes slowly after about 2 seconds, it's right. Slightly underdone beats overdone, since it firms up as it cools — if it sets too hard, loosen it with a splash of warm cream. Keep the cups covered in the fridge for up to 3 days.
