🛒 Ingredients

6 servings

6
  • 1 kg (2.2 lbs) fresh chicken hearts
  • 8 bay leaves
  • 1½ tbsp dried oregano
  • 1½ tbsp soy sauce
  • 1 tbsp all-purpose meat seasoning
  • 1 tbsp ground black pepper
  • 1 tbsp unsalted butter
  • 1 cup warm water

Directions

  1. 1

Clean the chicken hearts thoroughly: trim excess fat, remove the larger veins, and rinse away any clotted blood. Keep a thin layer of fat to ensure juiciness on the grill.

  2. 2

Melt the butter in warm water. Place the hearts in a large bowl, add all seasonings, soy sauce, and the butter-water mixture. Mix well with your hands until every piece is evenly coated.

  3. 3

Cover tightly with plastic wrap and refrigerate overnight (12–24 hours) so the marinade fully penetrates the meat.

  4. 4

Thread the hearts onto skewers and grill over high heat, turning frequently, until nicely browned and slightly charred on the outside.

💡 Chef's Tip

Don't skip the overnight marinade — it makes all the difference. Brush skewers with a little melted butter halfway through grilling for extra richness and a beautiful glaze.
