🛒 Ingredients

10 servings

10
  • 4 eggs
  • 1 cup (200 g) sugar
  • 9 oz (250 g) dark chocolate (70% cocoa)
  • 7 tbsp (100 g) unsalted butter
  • ½ cup (60 g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 pinch of salt

Directions

  1. 1

Preheat the oven to 350°F (180°C). Grease and line a 8-inch (20 cm) square pan with parchment paper.

  2. 2

In a large bowl, whisk the eggs with the sugar until pale and doubled in volume.

  3. 3

Melt the dark chocolate with the butter in a double boiler or microwave in 30-second intervals, stirring between each. Allow to cool slightly.

  4. 4

Fold the melted chocolate into the egg-sugar mixture using a spatula until combined.

  5. 5

Sift the cocoa powder and baking powder over the batter, add the pinch of salt, and mix until smooth.

  6. 6

Pour the batter into the prepared pan and bake for 30 to 35 minutes. The center should remain slightly wobbly when you remove it.

  7. 7

Let cool completely in the pan before unmolding and cutting into generous squares.

💡 Chef's Tip

The secret to the perfect fudgy brownie: pull it from the oven the moment the edges are set but the center still jiggles — it will firm up as it cools. For extra indulgence, fold in ½ cup of chopped walnuts or white chocolate chips before baking.
