🛒 Ingredients

9 servings

9
  • 140 g (10 tbsp) unsalted butter, diced
  • 250 g (1¼ cup) granulated sugar
  • 75 g (¾ cup) unsweetened cocoa powder (100%)
  • 1 pinch of fine sea salt
  • 2 large eggs, cold
  • 65 g (½ cup) all-purpose flour
  • 50 g (½ cup) walnuts or hazelnuts (optional)

Directions

  1. 1

Preheat the oven to 160 °C (325 °F) and line a 20 cm (8-inch) square baking pan with parchment paper, leaving overhang on two sides for easy removal.

  2. 2

In a microwave-safe bowl, combine the diced butter, sugar, cocoa powder and salt.

  3. 3

Microwave for 30 seconds, then stir vigorously until the mixture is smooth and glossy.

  4. 4

Let the mixture cool for 2–3 minutes, then add the eggs one at a time, beating well after each addition until the batter is silky and uniform.

  5. 5

Sift the flour over the batter and fold in with a spatula using firm circular motions until no dry streaks remain.

  6. 6

Fold in the walnuts or hazelnuts if using.

  7. 7

Pour the batter into the prepared pan, smooth the top and bake for 28–32 minutes, until a thin crackly crust forms on the surface.

  8. 8

Allow to cool completely in the pan before lifting out and cutting into nine squares.

💡 Chef's Tip

For the fudgiest result, pull the brownies when a skewer inserted in the centre comes out with a few moist crumbs — not clean. They firm up beautifully as they cool and taste even better the following day wrapped at room temperature.
