  • 2 cups (250 g) all-purpose flour
  • 2 tsp baking powder
  • 1 cup (100 g) grated Gruyère or cheddar
  • 3 large eggs
  • ¾ cup (200 ml) whole milk
  • ⅓ cup (80 ml) olive oil
  • 1 tsp dried mixed herbs
  • Salt and black pepper to taste
  • Filling of choice: bacon bits, olives, or sun-dried tomatoes

    Preheat oven to 350 °F (180 °C). Grease and flour a 9-inch (26 cm) loaf pan.

    In a large bowl, whisk together the eggs, milk, and olive oil until smooth and slightly frothy.

    Sift in the flour and baking powder, then fold gently with a spatula until just combined — avoid overmixing.

    Stir in the grated cheese, dried herbs, salt, and pepper until evenly distributed.

    Pour half the batter into the prepared pan, layer your chosen filling evenly on top, then cover with the remaining batter.

    Bake for 40–45 minutes until deep golden. Check doneness with a skewer — it should come out clean.
