🛒 Ingredients

4 servings

4
  • 2 egg whites
  • 4 tablespoons powdered sugar
  • ¾ cup heavy cream, very cold
  • 1 tablespoon unflavored gelatin powder
  • 2 tablespoons hot water
  • 1 teaspoon vanilla extract (optional)

Directions

  1. 1

Beat the egg whites with an electric mixer until stiff peaks form. Gradually add the powdered sugar while continuing to beat until the meringue is glossy and holds firm peaks.

  2. 2

Pour the very cold heavy cream into the bowl and gently fold it into the meringue using a spatula with slow, circular motions from bottom to top. Do not beat — this preserves the light, airy texture.

  3. 3

Dissolve the gelatin in hot water, stirring until completely smooth with no lumps. Allow it to cool to room temperature before using — it must not be warm when added.

  4. 4

Gently stir the cooled gelatin into the whipped cream mixture until evenly and fully incorporated.

  5. 5

Refrigerate for at least 2 hours before using to frost or decorate your favorite desserts.

💡 Chef's Tip

Keep your heavy cream as cold as possible right up until you use it — this is the key to a fluffier result. This cream can be prepared the night before and stored covered in the refrigerator for up to 24 hours.
