🛒 Ingredients

40 servings

40
  • 1 kg all-purpose flour
  • 2 cups warm milk
  • 50 g fresh baker's yeast
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • ½ cup vegetable oil
  • 500 g ground beef
  • 1 small onion, finely chopped
  • Salt and black pepper to taste
  • Fresh flat-leaf parsley, chopped
  • 4 tomatoes, seeded and diced
  • 4 garlic cloves, minced
  • 1 egg yolk for glazing

Directions

  1. 1

Dissolve the yeast in the sugar and let stand 5 minutes. Add the warm milk, flour, salt, and oil. Knead into a smooth, elastic dough. Cover and let rise for 30 minutes.

  2. 2

Divide the dough into 40 equal balls. Cover with a clean cloth and rest for 10 minutes.

  3. 3

In a skillet over medium heat, sauté the ground beef with garlic and onion until well browned. Season with salt and pepper.

  4. 4

Remove from heat and fold in the chopped parsley and diced seeded tomatoes. Let the filling cool completely before using.

  5. 5

Preheat the oven to 180 °C (355 °F). Flatten each ball into a small disc, place a tablespoon of filling in the center, and pinch the three edges together to form a closed triangle.

  6. 6

Arrange on a parchment-lined baking sheet and brush with beaten egg yolk.

  7. 7

Bake 20–25 minutes until deep golden brown. Serve warm.

💡 Chef's Tip

The filling can be made a day ahead and kept in the fridge — it only gets better overnight. Swap half the oil for melted butter for an even softer, richer dough.
