Chicken Enchilada Casserole

- 2 chicken breasts
- 6 corn tortillas
- 10.5 oz shredded Monterey Jack cheese (about 2.5 cups)

Cut each chicken breast into about 3 pieces. Place them in a medium saucepan.

Pour the enchilada sauce over the chicken. Cover and cook over medium-low heat for 20 minutes until fully cooked. Stir occasionally to prevent sticking to the bottom.

Remove the chicken from the saucepan and shred it using two forks.

Preheat the oven to 375°F.

Pour a quarter of the remaining enchilada sauce into the bottom of a baking dish. Place 2 tortillas on the bottom.

Add one-third of the shredded chicken, one-third of the remaining sauce, and one-third of the cheese.

Prepare the chicken in advance to save time. Do not add water: the chicken cooks perfectly in the enchilada sauce. For an even meltier dish, slightly increase the amount of cheese.
