🛒 Ingredients

8 servings

8
  • 1 medium cauliflower, cut into florets
  • 5 chicken thighs and drumsticks
  • 3 garlic cloves, crushed
  • 1 medium onion, finely chopped
  • salt, black pepper and mixed herbs to taste
  • ½ cup water or chicken broth
  • ⅔ cup sour cream or soft cream cheese

Directions

  1. 1

In a large pot, sauté the garlic and onion in a drizzle of olive oil over medium heat until softened and lightly golden.

  2. 2

Add the chicken pieces and brown them on all sides. Season generously with salt, pepper and herbs.

  3. 3

Pour in the water or broth, then add the cauliflower florets. Cover and simmer over low heat for about 20 minutes.

  4. 4

Carefully stir once halfway through cooking, taking care not to break apart the florets.

  5. 5

Remove from heat, stir in the sour cream gently, adjust seasoning and serve hot.

💡 Chef's Tip

Full-fat sour cream gives the richest sauce. A pinch of smoked paprika added with the herbs brings a lovely depth of flavor.
