Christmas Flapjack Pudding
A delicious blend of caramelized oats and traditional Christmas pudding. This orange-scented British treat is perfect for the holidays. Crispy on the outside, gooey and flavorful on the inside.

- 8.8 oz unsalted butter
- 7.9 oz dark brown sugar
- 6.7 fl oz golden syrup
- Zest of 1 orange
- 17.6 oz rolled oats
- 8.8 oz Christmas pudding

Preheat oven to 350°F (325°F fan/convection, gas mark 4) and grease and line a 10in x 8in baking tin.

In a large saucepan, melt the butter, dark brown sugar, golden syrup, and orange zest over medium heat until smooth and combined. Do not overheat to avoid reducing the volume.

Add the rolled oats and mix until they are well coated.

Stir in the Christmas pudding and pour the mixture into the prepared tin.

Using a spoon, flatten the surface and bake for 40 minutes until the edges start to brown.

While the mixture is still warm, cut into 12 equal squares.

Allow to cool completely before separating the pieces along the cuts.

Store for 5 days in an airtight container or up to 1 month in the freezer.
