Gaucho churrasco is the soul of Brazilian barbecue — primal, generous, and deeply satisfying. Thick cuts of beef, coarse salt, and slow-burning embers are all you need for a meal that brings people together. Straight from the pampas of southern Brazil to your backyard.

🛒 Ingredients

4 servings

4
  • 1 kg beef (short ribs, picanha, or sirloin cap)
  • Coarse sea salt, to taste
  • 2–3 large metal skewers
  • Wood or charcoal embers
  • Olive oil, optional, for basting

Directions

  1. 1

Build a fire using wood or charcoal and let it burn down to steady, glowing embers — no open flames for even heat.

  2. 2

Thread the beef pieces onto the skewers and season generously with coarse salt on all sides before placing over the heat.

  3. 3

Position skewers about 25 cm (10 inches) above the embers and cook, turning regularly: rare (10 min), medium (20 min), or well-done (30 min).

  4. 4

Rest the meat 2 minutes off the heat, then slice thickly and serve directly from the skewer.

💡 Chef's Tip

Picanha (sirloin cap) is the prized cut for authentic churrasco — keep the fat cap on, it self-bastes the meat as it cooks. Slow embers, not fast flames, are the real secret to juicy results.
