Classic Composed Salad with Mayonnaise

- 2 medium carrots (about 8.8 oz)
- 1/2 red or green bell pepper
- 3 to 4 tablespoons mayonnaise
- 1 bunch fresh green herbs (flat-leaf parsley, chives, or cilantro)
- Fine salt and freshly ground pepper
- 4 cups water for cooking

Wash the potatoes and carrots under cold water, then peel if desired.

Bring a pot of salted water to a boil and add the potatoes and carrots cut into large chunks.

Cut the cooled potatoes and carrots into small, even cubes of about 1/2 inch.
