  • 3 medium potatoes (about 14 oz)
  • 2 medium carrots (about 8.8 oz)
  • 1/2 red or green bell pepper
  • 3 to 4 tablespoons mayonnaise
  • 1 bunch fresh green herbs (flat-leaf parsley, chives, or cilantro)
  • Fine salt and freshly ground pepper
  • 4 cups water for cooking

    Wash the potatoes and carrots under cold water, then peel if desired.

    Bring a pot of salted water to a boil and add the potatoes and carrots cut into large chunks.

    Cook for about 15 to 20 minutes until the vegetables are tender but still firm.

    Drain completely and let cool to room temperature for 5 to 10 minutes.

    Cut the cooled potatoes and carrots into small, even cubes of about 1/2 inch.

    Wash and finely mince the bell pepper, then remove the seeds.
