  • 1 onion, chopped
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, crushed
  • 1 tsp cumin
  • 1 tsp paprika
  • 3/4 tsp salt
  • 1/2 tsp cayenne pepper
  • 4 eggs

    In a large cast-iron skillet or a sauté pan with a lid, heat the oil over medium-high heat.

    Add the onion and sauté for 2-3 minutes until tender.

    Add the bell peppers and garlic, and continue to sauté for an additional 3-5 minutes.

    Add the tomatoes, cumin, paprika, salt, and cayenne pepper. Mix well and bring to a simmer.

    Reduce the heat to medium-low and let simmer uncovered for 10-15 minutes until the sauce reaches your desired thickness.
