🛒 Ingredients

10 servings

10
  • 2 cups granulated sugar
  • ½ cup water
  • 4 cups fresh coconut flesh, cut into 2 cm cubes
  • 1 pinch of sea salt

Directions

  1. 1

Crack open the coconut, remove the shell and brown inner skin, then cut the white flesh into evenly sized 2 cm cubes. Set aside.

  2. 2

In a deep heavy-bottomed saucepan, combine the sugar and water. Bring to a boil over high heat, stirring continuously in one direction to ensure even sugar dissolution.

  3. 3

Add the coconut cubes into the boiling syrup. Reduce heat to medium and keep stirring non-stop, always in the same circular direction.

  4. 4

Cook for 40 to 45 minutes until all the liquid evaporates — the sugar will first crystallize and then caramelize around every piece of coconut, turning them a beautiful amber gold.

  5. 5

Remove from heat as soon as the coconut pieces are evenly golden. Spread immediately onto a parchment-lined baking tray. Cool completely, then gently break apart any pieces that have stuck together.

💡 Chef's Tip

Always stir in one consistent direction to prevent uneven crystallization. Once cooled, store in an airtight container at room temperature for up to 2 weeks.
