🛒 Ingredients

25 servings

25
  • 200 g baking chocolate (dark or milk)
  • Small disposable espresso cups
  • 1 can sweetened condensed milk (14 oz / 395 g)
  • Same volume of concentrated passion fruit juice
  • 1 can heavy cream (7 oz / 200 ml)
  • 1 packet unflavored gelatin powder (optional, for firmer texture)
  • 1 cup passion fruit pulp with seeds
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup water

Directions

  1. 1

Melt the chocolate using a double boiler over low heat, stirring constantly until perfectly smooth and glossy. Do not let the water boil.

  2. 2

Remove from heat as soon as the chocolate is fully melted.

  3. 3

Spoon the melted chocolate into the small cups, tilting and rotating them to coat the inside evenly.

  4. 4

Refrigerate for 5 minutes, then add a second layer of chocolate, rotating the cups again for even coverage.

  5. 5

Return to the refrigerator for another 5 minutes. Repeat if needed for a sturdier shell.

  6. 6

To unmold, make two small cuts along the rim with scissors and peel away the cup like a banana skin. Set the chocolate shells aside.

  7. 7

If using gelatin, soften it in cold water according to package directions.

  8. 8

Blend the condensed milk, passion fruit juice, heavy cream, and hydrated gelatin until smooth and creamy.

  9. 9

For the passion fruit curd: cook the passion fruit pulp with water, sugar, and cornstarch in a small saucepan over medium heat, stirring until thickened. Let cool.

  10. 10

Refrigerate the mousse for 1 hour, then pipe or spoon it into the chocolate cups. Finish with a drizzle of passion fruit curd before serving.

💡 Chef's Tip

Use good-quality chocolate for shiny, sturdy shells. The mousse can be made the night before for stress-free entertaining. For an extra visual touch, garnish with a few passion fruit seeds on top.
