  • 9 oz cremini or button mushrooms
  • 1 onion
  • 2 cloves garlic
  • 2/3 cup dry white wine
  • 3 1/4 cups warm vegetable broth
  • 3 tbsp butter
  • 2 oz grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

    Clean and slice the mushrooms. Finely chop the onion and garlic.

    Heat the broth in a saucepan. Keep it at a simmer.

    In a large skillet, heat the olive oil. Sauté the onion and garlic for 2 minutes.

    Add the mushrooms and cook for 3-4 minutes until they release their liquid.

    Add the rice and stir for 1-2 minutes to coat thoroughly.

    Deglaze with the white wine and stir until completely absorbed.
