- 1 1/2 cups Arborio rice
- 9 oz cremini or button mushrooms
- 1 onion
- 2 cloves garlic
- 2/3 cup dry white wine
- 3 1/4 cups warm vegetable broth
- 3 tbsp butter
- 2 oz grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste

Clean and slice the mushrooms. Finely chop the onion and garlic.

Heat the broth in a saucepan. Keep it at a simmer.

In a large skillet, heat the olive oil. Sauté the onion and garlic for 2 minutes.

Add the mushrooms and cook for 3-4 minutes until they release their liquid.
