  • 1 cup sliced mushrooms
  • 1/2 cup dry white wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley

    In a large bowl, whisk together the flour, salt, and pepper.

    Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.

    Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix.

    Gather the dough into a ball, flatten it into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
