🛒 Ingredients

6 servings

6
  • 6 very ripe bananas
  • ¾ cup (150 g) white sugar
  • 1 teaspoon whole cloves
  • 2 cinnamon sticks
  • 1½ cups (375 ml) water

Directions

  1. 1

Peel the bananas and slice them into rounds about ½ inch (1 cm) thick.

  2. 2

In a heavy-bottomed saucepan, heat the sugar over medium heat without stirring until it turns into a golden caramel.

  3. 3

Meanwhile, bring the water to a gentle simmer with the cinnamon sticks and cloves to create a fragrant spiced syrup.

  4. 4

Carefully pour the hot spiced syrup into the caramel in a thin stream, stirring gently to combine — watch for spatters.

  5. 5

Add the banana slices to the caramel syrup and fold gently to coat each piece.

  6. 6

Simmer over low heat for 20–25 minutes, stirring regularly to prevent sticking.

  7. 7

The compote is ready when the bananas are tender, deeply golden, and the syrup coats the back of a spoon.

  8. 8

Transfer to a serving dish, cool to room temperature, then refrigerate for at least 1 hour before serving.

💡 Chef's Tip

For a smoother, jam-like texture, lightly mash a few banana slices toward the end of cooking. Keeps refrigerated for 5 days and is heavenly served warm over vanilla ice cream.
