Directions
- 1
Rinse the strawberries briefly, hull them and halve the largest ones.
- 2
In a bowl, toss the strawberries with the sugar, lemon zest and juice. Cover and let macerate in the fridge for at least 2 hours (or overnight).
- 3
Tip everything into a large saucepan and bring to a gentle simmer over medium heat, stirring from time to time.
- 4
Skim off the pink foam that rises to the surface regularly to keep the jam beautifully clear.
- 5
After 20 to 25 minutes, test the set: drop a little jam on a cold plate, it should wrinkle slightly. Pour straight into sterilised jars and seal.
💡 Chef's Tip
Choose ripe, fragrant strawberries for a more flavourful jam. For a less sweet result, reduce the sugar to 350 g and add a little more lemon. The jars keep for up to a year in a cool, dark place; once opened, store in the fridge.
