Directions
- 1
In a stand mixer, beat the softened butter and sugar together until light, pale and creamy.
- 2
Add the eggs one at a time, then the vanilla extract, beating well after each addition until smooth.
- 3
Add the black cocoa powder and mix until the dough is evenly and deeply colored throughout.
- 4
Turn off the mixer. Sift the flour, baking powder and salt directly into the bowl, then fold in with a spatula until fully incorporated with no streaks of dry flour.
- 5
Fold in the white chocolate chips until evenly distributed throughout the dough.
- 6
Roll the dough into balls, flatten them slightly into thick discs and place on a parchment-lined baking sheet, leaving plenty of space between each cookie as they spread while baking.
- 7
Bake in a preheated oven at 180 °C (350 °F) for 10 to 15 minutes, until the edges look set and firm.
- 8
Remove from the oven and leave to cool completely on the tray before lifting off, allowing the cookies to fully firm up.
- 9
Place a few marshmallows in a glass or ceramic bowl and microwave for 20 seconds. Work in small batches, as they cool and harden within seconds.
- 10
Carefully — the marshmallow is hot — grab a softened marshmallow between two fingers of each hand and gently pull it apart to create thin webs; drape the strands over the cookies, pressing the ends to the edges to hold them in place.
💡 Chef's Tip
Black (Dutch-process) cocoa powder gives the darkest, most dramatic color — look for it at specialty baking shops. Regular cocoa works too, just with a lighter result. If the marshmallows set too quickly, give them another 5 seconds in the microwave. Work fast and in small batches for the best web effect!
