🛒 Ingredients

12 servings

12
  • 3 lbs (1.5 kg) whole beef short ribs
  • 8 large yellow onions, sliced into rings
  • 4 beef bouillon cubes
  • 2 bay leaves
  • 1 tablespoon olive oil
  • Freshly ground black pepper

Directions

  1. 1

Layer half of the sliced onions on the bottom of the pressure cooker.

  2. 2

Place the beef ribs on top, then cover with the remaining onion rings.

  3. 3

Crumble the bouillon cubes over the layers and add the bay leaves.

  4. 4

Seal the pressure cooker and bring to high heat until pressure builds.

  5. 5

Reduce heat to low and cook for 45 minutes under full pressure.

  6. 6

Turn off heat and allow pressure to release naturally before opening.

  7. 7

Transfer ribs to a serving dish and spoon the pan juices generously over the top.

💡 Chef's Tip

For deeper flavor, sear the ribs in a little oil before layering. The onion broth left in the pot is excellent served over mashed potatoes or rice.
